Fat sits between the heat and the food because it can hold temperatures much higher than any food can. Fat is a protective coating when food hits the pan. Fat has the capacity to affect texture.
- Preheat the pan before adding oil, then preheat the oil before adding food. You want to achieve that sizzling sound when adding the food. Otherwise take it up and wait for a bit longer.
